Vegan Chickpea Egg Salad

(Makes Four Sandwiches)


Ingredients:

  • 2 tsp Eggcellent
  • 1 can (15 oz) smashed chickpeas
  • 1/4 cup diced sweet onion
  • 1 stalk finely diced celery
  • 3 Tbsp diced pickles
  • 4 Tbsp Vegan mayo
  • 2 Tbsp fresh chopped cilantro or any herb you prefer
  • 2 Tbsp Vegan Dijon mustard
  • 1 tsp lemon juice
  • Black pepper optional

Instructions:

  1. Drain then roughly mash the chickpeas in a large bowl. Don't overdo it.
  2. Add all the other ingredients into your mixing bowl and combine them.
  3. Voila! Easy Vegan egg salad
